Crazy for dates? Then you’ll like this moist, perfectly sweet quick bread with chopped walnuts and coconut milk. Xanthan gum serves as an egg substitute to help bind the ingredients together.  

VEGAN DATE NUT BREAD

 

Ingredients

  • 1 cup pitted and chopped Medjool dates
  • 1/2 cup chopped walnuts
  • 2 cups white whole-wheat flour, divided
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt 
  • 1 tsp. xanthan gum* 
  • 2/3 cup sugar 
  • 1/3 cup coconut oil  
  • 3/4 cup coconut milk 
  • 1 tsp. apple cider vinegar
  • Cooking spray

Instructions
Preheat oven to 330 degrees. (Yes, 330. That’s not a typo!)

Dredge dates and walnuts in 2 tablespoons of the flour. (If dates are sticking together in clumps, separate them into small pieces while dredging.) Set aside. 

In a medium bowl, combine remaining flour, baking powder, baking soda, salt, xanthan gum, and sugar. In another bowl, whisk together coconut oil, coconut milk, and vinegar. Add wet ingredients to the dry and mix just until combined. Stir in dates and nuts. 

Pour into 9-by-5-inch loaf pan prepared with cooking spray. Place in oven immediately and bake 50 minutes or until toothpick inserted in the center comes out clean. 

Cool 10 minutes before removing from pan to a wire rack to cool completely.

*Available at health food stores.
