Chilled papaya with a squeeze of lemon can make a healthy breakfast even more delicious. But take some of that papaya—and even some of the seeds—to make this easy salad dressing to drizzle on your favorite greens.
PAPAYA SEED DRESSING
- 1/2 cup papaya flesh, seeds reserved
- 1/3 cup rice vinegar
- 4 tsp. sugar
- 1/2 tsp. dry mustard
- 1/4 tsp. salt
- 1/2 cup olive oil
- 1 Tbsp. papaya seeds
In a blender, combine papaya, vinegar, sugar, mustard, and salt and blend until smooth. Add oil slowly while blending. Add papaya seeds and pulse until seeds resemble ground peppercorn.
Serve immediately over your favorite greens or refrigerate up to 3 days. Makes 6 servings.
