Pizza is the go-to food when you don’t have much time or money to feed hungry kids. With this easy recipe, your kids can make their own pizza at home with little or no supervision. Have the ingredients available in the refrigerator ready to assemble to free up more time for Mom and Dad.

Add as little or much of the toppings as you want or have them add their own favorite toppings like chopped mushrooms, olives, and pineapple. Try replacing the English muffin with pita bread. Get creative!

 Ingredients

  • 2 whole-wheat English muffins, split in halves
  • Pizza or marinara sauce in a jar
  • Shredded mozzarella cheese (You can also use cheddar cheese or a combination of both.)
  • 4 thin tomato slices
  • 8 spinach leaves
  • 8 pepperoni slices
  • Grated Parmesan cheese

Instructions
Top each muffin half with a dollop of sauce and spread evenly. Follow with a tablespoon of mozzarella cheese, a tomato slice, two spinach leaves, and two pepperoni slices.

Place muffins on a foil-lined toaster oven pan. Bake in a toaster oven for about 5 minutes or until cheese is melted and muffin edges are browned. Watch carefully to make sure pizzas don’t burn.

Remove from oven and sprinkle with Parmesan cheese.

 Makes 4 servings.
