Don’t have time to make an imu for Thanksgiving? This Instant Pot kalua turkey recipe cuts down the cooking time by more than half and still gives you the same great flavor your ohana expects.

KALUA TURKEY

Ingredients

  • 10-12 lb. turkey
  • 3 Tbsp. Hawaiian salt
  • 1 cup water
  • ½ bottle (3 ½ ounce size) liquid smoke

Instructions

Remove neck, giblets, heart, and any other packets from turkey cavities. Wash turkey well with cold water. Drain turkey and pat dry.

Rub salt on the inside and outside of turkey. Pour liquid smoke inside the cavities and outside of the turkey.

Put 1 cup water into Instant Pot. Place turkey inside of the Instant Pot.

Tip: A 10.5-pound turkey fit perfectly in an 8-quart Instant Pot.

Cover and lock the lid. Select the manual button and cook for 90 minutes under high pressure.

When it’s finished, hit cancel and let the pressure come down naturally.

Once the Instant Pot is depressurized, pull turkey out. Separate the turkey meat from the bones and shred. Discard the bones and skin. Add some of the juice from the Instant Pot as you shred to keep turkey moist.

Add more Hawaiian salt and liquid smoke to the meat, if needed.
