Have you ever eaten a faux meatloaf that obviously looks like the beans, vegetables, and/or grain it’s made of? Here’s a loaf that looks (and tastes) surprisingly like the real thing. And it’s made with the unlikely combination of cottage cheese and dry cereal. 

And because any faux or real meatloaf screams for gravy, serve this cottage cheese loaf with heart-healthy gravy.

COTTAGE CHEESE LOAF

Ingredients

  • 1/2 cup unsalted butter
  • 1 medium onion, chopped
  • 1/2 cup chopped pecans
  • 16 oz. cottage cheese
  • 2 packets dry onion soup mix
  • 3 eggs, beaten
  • 4 cups Special K cereal
  • Cooking spray

Instructions
Melt butter in a large saucepan over medium heat. Sauté onion and pecans until onion is translucent, about 5 minutes. Remove from heat. Stir in cottage cheese and dry onion soup mix. Add eggs and cereal and stir to combine well. Transfer mixture to an 8-by-8-inch square baking pan prepared with cooking spray, spreading evenly and pressing lightly. Bake in preheated 350-degree oven 45-60 minutes. Makes 9 servings.
