Do you like mangoes? I do. Actually, I love mangoes.

If mangoes were available year-round, I’d eat them year-round. Sure, we can get imports from Mexico during the off-season, which are usually OK. But nothing beats mangoes from Hawaii. And right now is peak season for luscious, delicious mangoes. My favorite fruit. 

I like my mango straight up or with cottage cheese (the perfect breakfast!). Try this no-cooking-required pudding for an easy dessert. You’re welcome. 

Mango Chia Pudding

2 cups unsweetened almond milk
1 Tbsp. honey
1/2 cup chia seeds
3 cups diced mango

In a medium bowl, whisk together almond milk, honey, and chia seeds. Cover and refrigerate 2 hours. Mix well and refrigerate 2 more hours. Layer chia seed mixture with mango in individual dessert glasses. Makes 4 servings.
