What really makes it shine is how well it absorbs flavor. Garlic, shoyu, tomatoes, olive oil, miso, spices – it takes on whatever you pair it with.
If you’ve ever been unsure about eggplant, these recipes are a great place to start. They keep things simple while showing off just how versatile it can be.
BABA GHANOUSH
This classic dish from the Middle East is made by roasting eggplant until soft, then blending it into a smooth dip with tahini, garlic, lemon juice, and olive oil. If you’re familiar with hummus, think of it as a close cousin. Both are creamy, scoopable, and built for dipping, but instead of chickpeas, baba ghanoush gets its rich texture and smoky flavor from roasted eggplant. It’s simple, shareable, and succulent.
Ingredients
- 2 medium eggplants
- 2 Tbsp. tahini
- 2 Tbsp. lemon juice
- 1 to 2 cloves garlic
- 2 Tbsp. olive oil
- Salt to taste
- Chopped parsley, for garnish
Instructions
Roast whole eggplants at 400 degrees until very soft, about 30 to 40 minutes. Let cool, then scoop out the flesh and discard the skins.
Blend eggplant with tahini, lemon juice, garlic, olive oil, and salt until smooth.
Taste and adjust seasoning. Top with parsley and a drizzle of olive oil before serving.
Makes 1½ cups.
EGGPLANT PARMESAN PASTA SKILLET
This restaurant-quality dish brings together everything you love about eggplant Parmesan and incorporates pasta to make a delicious and satisfying meal. It’s rich, cheesy, and comforting without being overly heavy.
Ingredients
- 8 oz. pasta (short shapes like penne or rigatoni)
- 2 Tbsp. olive oil
- 1 medium eggplant, cut into bite-sized cubes
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 15-oz. can crushed tomatoes
- 1 tsp. Italian seasoning
- Salt and pepper, to taste
- 1 cup shredded mozzarella cheese
- ⅓ cup grated Parmesan cheese
- Fresh basil, for garnish
Heat olive oil in a large skillet over medium heat. Add eggplant and cook until softened and lightly browned. Add onion and cook until translucent, then stir in garlic.
Pour in crushed tomatoes and add Italian seasoning, salt, and pepper. Simmer for about 10 minutes.
Add cooked pasta to the skillet and toss to combine. Sprinkle mozzarella and Parmesan on top, then cover until melted. Garnish with fresh basil and serve warm.
Makes 4 to 6 servings.
EGGPLANT WITH GARLIC SAUCE
This dish leans into eggplant’s ability to soak up sauce. The result is tender pieces coated in a garlicky, sweet and savory glaze that goes great with a bowl of rice.
Ingredients
- 2 medium Chinese or Japanese eggplants
- 1 Tbsp. oil of choice (we used avocado oil)
- 4 cloves garlic, minced
- 1 tsp. grated ginger
- 2 to 3 green onions, chopped
Sauce
- 2 Tbsp. shoyu
- 1 Tbsp. oyster sauce
- 1 Tbsp. rice vinegar
- 1 tsp. sugar
- ½ cup water or broth
- 1 tsp. cornstarch
Instructions
Cut eggplant into long strips or chunks. Heat oil in a pan over medium-high heat and cook eggplant until softened. Remove and set aside. In the same pan, sauté garlic and ginger until fragrant.
Mix sauce ingredients in a small bowl, then pour into the pan.
Return eggplant to the pan and toss to coat. Simmer until the sauce thickens.
Finish with green onions and serve over rice.
Serves 3 to 4.
