We’ve shared some of our favorite apple recipes and a hearty pumpkin stew this fall. Now, get the best of both apple and pumpkin worlds! You can’t go wrong with apple crisp during the autumn months (or any time of year), and this version ups the deliciousness factor by including pumpkin. Enjoy it with a scoop of vanilla ice cream or on its own.
Ingredients
- Nonstick cooking spray
For the filling
- 5 large apples, peeled and chopped into 1-inch chunks (we used Honeycrisp)
- ½ cup pumpkin puree
- 3 Tbsp. maple syrup
- 2 Tbsp. brown sugar
- 1 tsp. vanilla
- 1 Tbsp. freshly squeezed lemon juice
- ½ tsp. pumpkin pie spice
- ½ tsp. cinnamon
For the topping
- ½ cup rolled oats
- ⅓ cup white whole wheat flour
- ¼ cup brown sugar
- ½ tsp. pumpkin pie spice
- ½ tsp. cinnamon
- ¼ tsp. kosher salt
- ⅓ cup chopped pecans
- 4 Tbsp. cold unsalted butter, diced
Instructions
Preheat the oven to 350 degrees F. Spray 8-by-8-inch square pan with nonstick cooking spray.
Add all the filling ingredients to a medium bowl and toss until combined. Transfer mixture to prepared baking dish.
For the topping, combine oats, flour, brown sugar, pumpkin pie spice, cinnamon, salt, and pecans. Add butter and mix well using your hands until mixture comes together (it will be crumbly).
Add topping over filling. Transfer dish to oven. Bake until filling is bubbling and topping is crisp, about 35-40 minutes. Makes 6 servings.
