Between the sweet apples, cinnamon, and almond butter, fall flavors really shine through in these oatmeal cups. Bake them in a 12-cup muffin pan for a breakfast on-the-go or a mini 24-cup muffin pan for the perfect mid-afternoon treat.
Ingredients
- Nonstick cooking spray
- ½ cup unsweetened applesauce
- ½ cup almond butter
- 2 large eggs
- ¼ cup pure maple syrup
- 1 tsp. vanilla extract
- 1 cup milk (we used vanilla oat milk)
- 2 cups old fashioned rolled oats
- 1 tsp. baking powder
- 2 tsp. cinnamon
- ¼ tsp. nutmeg
- ¼ tsp. allspice
- ¼ tsp. salt
- 1 medium Honeycrisp apple, peeled and diced
Instructions
Preheat oven to 350 degrees F. Spray 24-cup mini muffin pan with nonstick cooking spray.
In a medium bowl, mix applesauce, almond butter, eggs, maple syrup, vanilla, and milk until smooth and well combined.
Stir in rolled oats, baking powder, cinnamon, nutmeg, allspice, and salt. Stir until well combined. Fold in diced apple.
Evenly distribute batter between muffin liners. Bake 25-30 minutes, or until golden brown on top. Makes 24 servings.

SPICY CHEDDAR APPLE SANDWICH
A quick and satisfying lunch, this sandwich provides the perfect amount of heat thanks to the pickled jalapenos. Add in sweet apples, melted cheese, toasted sourdough, and crispy kettle potato chips, and you have an explosion of savory, sweet, and crunch.
Ingredients
- 2 slices sourdough
- 2 slices sharp cheddar cheese
- 1 Tbsp. grainy Dijon mustard
- 1 tsp. honey
- ¼ Honeycrisp apple, thinly sliced
- ¼ small red onion, thinly sliced
- ¼ cup spinach
- Kettle potato chips
- 10 slices pickled jalapenos
Instructions
Place both slices of bread on baking sheet. Broil on high in oven for 1-2 minutes, or until lightly browned.
Remove baking sheet from oven. Turn sliced bread over. Cover one slice with one slice of cheddar cheese, then return the bread with cheese to broiler for another 1-2 minutes, or until cheese is melted.
Spread the plain slice of bread with mustard. Drizzle honey on top, then add apple slices, red onion, spinach, and kettle chips. Top the melted cheese slice with pickled jalapenos. Carefully close the sandwich and gently press down until chips crunch. Makes 1 serving.
